At The Coffee Grounds, yes, we sell coffee. We also sell wine, beer, chocolate, cheese, and more. All things that recognizably have a terroir. The coffees below have something special about them that we loved and are all grown and taken care of the way a vigneron does. Once the grower shepherds the green beans to us, we roast it. And we roast it well. For six years running, we have won best roaster in our area and have continued to grow our coffee business.
These coffees are fully traceable to the producer, and come with information such as variety, farm elevation and specific processing details. Plain and simple, these coffees are truly top-shelf, and we are very pleased as a small, single batch roaster to work with this outstanding coffee.

This year we decided to focus on the processing method. Once the coffee is picked, the cherry needs to be removed from the seed/pit that we all know and love. But how you do that can drastically influence the flavor of the coffee. Below are some descriptions of the processes you will see in the coffee information below:
Natural (or Dry-processing): the coffee, once picked, is set out on screens or patios where it is dried to look a bit raisined. Then the cherry and the parchment around the bean (think of that papery-bit around a peanut) are fused together and mechanically removed. Natural process coffees can have noticeably fruity or “pulpy” flavors, often described as “boozy” or “winey”. They can also have strong nutty and/or chocolate characteristics, and typically a heavier or syrupy body.
Washed: The coffee cherry is run through a depulper almost immediately to squeeze the seed out from the skin. But there is still some sticky sugar stuck the seed called mucilage. The coffee is placed in a fermentation vessel and yeast break down the mucilage. At a certain point the seeds are then washed of the broken down mucilage and then dried on patios or screens. Washed coffees are thought to have clean, articulate flavors with a caramel or sugary sweetness and a wide spectrum of fruit acidity depending on other factors; capable of bright, crisp notes.
Red Honey: There are grades of honey processing, the coffee below is “red honey” processed, which is a moderate honey process. Honey coffee is depulped to remove the skin of the cherry, and the coffee seed is allowed to dry with some or all of its sticky fruit mucilage intact. This process retains some of the desirable characteristics of a full Natural coffee (heavy body, sweet fruitiness with lower acidity, deep chocolate notes) while also speeding the drying process considerably.
Anaerobic Natural: The intact coffee cherries are placed in large barrels with water and sealed from oxygen for 48 to 72 hours. They ferment without oxygen, which imparts a completely different flavor from natural or honey processing. After fermentation, the pulp and mucilage are removed and the beans are laid to dry completely in the sun. This process can impart incredibly exciting, exotic flavors like tropical fruit and spice.

Notes: Almond and cooked cascara with mellow amaretto and fresh melon flavors. Tart acidity and good sweetness.
Farm(er) Information: Co-owner of the farm with his brother. After winning his cup of excellence award in 2011, some of Luis’s coffee have demanded green bean prices of $45/# - that translates to over $110/# once the customer sees it, depending on the retailer.

Method: Natural
Notes: Fresh rose, dried hibiscus, and cooked cranberry flavors with lots of winey acidity and candy-like sweetness.
Farm(er) Information: Carlos a 5th generation coffee producer. Carlos has won two cup of excellence awards for his coffee and experimental approaches. His Geisha Anaerobic Natural process coffee took first place in the experimental category in 2024. We’re looking forward to this coffee in this set of four - where the others should retail for about $30/# the cost on this one is more than twice that of the others. We should really retail this one for about $50. It is also the coffee that is limiting the offering this year as we were allocated only (1) 30kilo bag of this.

Notes: Fresh apple and cranberry with dried fruit flavors. Tart malic acidity and fruitlike sweetness.
Farm(er) Information: Oscar and Francesca have had to innovate a few times in their careers. After leaving a cooperative, they had to buy their own depulper in 2005 and they had no idea what they were doing when they started. After figuring this out, there was an earthquake in 2008 that took out their electricity and water supplies during harvest. They speedily built raised patios to quickly dry their coffee in a natural process. Today they use the honey process and adjust it per the coffee they are working with to produce the best flavors.

Method: Anaerobic Natural
Notes: Lots of cooked red grape with cocoa and dried coffee cherry flavors. Winey acidity and mild candy-like sweetness.
Farm(er) Information: Finca los Angeles is a cooperative farm. Several years ago there was a natural disaster that wiped out much of the infrastructure in the community. This farm has been a staple in the area and a way for many in the community to get paid. It got it’s first Cup of Excellence in 2020. Unlike the other farms, this one is nearly flat and 100% pacamara trees.
