Tea is a beverage made by steeping processed leaves, buds, or twigs of the tea bush, Camellia sinensis, in hot water. If it doesn't come from this plant, it is not tea in the true sense of the word. All tea is harvested from this one species, but processed differently to attain different levels of oxidation. The four basic types of tea, in order from most to least processed, are black tea, oolong tea, green tea, and white tea. The term herbal tea usually refers to infusions of fruit or herbs, such as rosehip or chamomile, and contain no Camellia sinensis.
Teas are grown in different regions around the world and vary due to season, climate, soil, age, elevation, and manufacturing practice. The most widely recognized regions are China, Japan, and India. The Chinese have enjoyed tea for thousands of years and are considered to have the earliest records of tea drinking, which date back to the first millennium BC.
